脆皮韭菜盒子
传统的韭菜盒子是用烫面或半发面做外皮的,最近《文学城.私房小菜〉(http://web.wenxuecity.com/BBSList.php?SubID=cooking ) 里有网友用春卷皮子做成脆皮韭菜盒子,引起坛子里大厨二厨的热烈反应,阎家食堂经理一看,这个创意不错,看起来也很好吃,于是在今天星期六的中午实践了一把(里面的馅略有不同),制得11个山寨脆皮韭菜盒子,再加上昨晚剩的米饭烧成无锡泡饭,吃了一顿挺不错的中式早中饭。 材料:超级新鲜韭菜一大把(自留地里割的),美国小葱一小把(也是自留地里的),鸡蛋3只,粉丝2把,泡软在开水里烫熟,猪肉馅50克。将韭菜,小葱,粉丝切碎,鸡蛋,肉馅分别炒熟,将以上材料拌在一起,加少许盐和味精。买现成的冷冻春卷皮一袋,化冻待用。 包法基本与春卷相同,但要包得扁一些,有盒子的样子。 平底锅放一些油,油热后放韭菜盒子,然后用小火两面煎黄。注意,是煎不是炸,因为韭菜和小葱是生的,所以不能用大火多油炸,否则外皮易焦而里面不熟。 受到某同学的高度称赞,该同学吃了7.5只盒子,2碗泡饭。
