第一次尝试自制冰皮月饼
去年年底家人给带来2个传统的木制月饼模子,今年8月去芝加哥中国城看到有塑料的模具,又买了一个。那啥,今年中秋前几日开始第一次尝试自制月饼,之前上网做了不少homework , 感觉自制传统的广式月饼 难度比较大,对馅料和饼皮要求比较高,于是决定挑战一下相对比较简单的免烤冰皮月饼, 以保第一次的成功率。 饼皮月饼原料来自网上君之的方子: 冰皮配料:糯米粉45克,粘米粉35克,澄面(小麦淀粉,或做虾饺的粉)20克,牛奶185克,糖粉50克,色拉油20ML。这个配比可制8个中等大小的月饼。 将原料倒入大碗里混合均匀成稀面糊,放入蒸锅内蒸熟,一般20分钟左右即可,如分量多,中间可开盖搅拌一下,以保证底层的面糊蒸熟。稍凉后将饼皮放入一个大食品袋中搓揉,因为饼皮含有油分,不会很粘,很快就能揉成光滑的面胚。如果需要上色,可加天然色素或买的食用色素 (Food color), 用后者的话,只需用筷子点一滴,插入面胚里然后揉搓均匀就可以了。 我用的三种馅料,紫薯 —将紫薯煮熟剥皮,然后用勺子压碎。芋头—买的火锅用的熟冰冻芋头,蒸熟后碾碎。绿豆沙–干的去皮绿豆,浸泡3-5个小时,然后上锅蒸熟碾碎即可。可根据自己喜好加糖调制。 包的时候手上可扑些熟的糯米粉防粘手,小心将馅料包入饼皮里,放入模子内,或拍或压出来即可。实验下来,觉得冰皮月饼比较软且粘,用木模很难拍出,用塑料模子比较好压出来。所以我这次的月饼都只能是同一花型的了。 初试成功! 这一盘带去朋友家开中秋Party, 很应景哦。 来个特写镜头 看看内组织。大功告成!
