一树樱桃带雨红—家制樱桃酱
家门前的一株樱桃树是9年前我们买了这个房子后,楼同学公司里一家台湾朋友作为庆贺我们乔迁新居送的礼物。现在科技发达了,据说在苗圃时小树已经进行了培育,实现了雌雄同株,所以只种一株樱桃树,仍然可以开花结果,不再是“樱桃好吃树难栽”了,不过,这株买来标签上清清楚楚写的是“甜樱桃”的樱桃树,结的果子并不是很甜的,与超市里买的著名的华盛顿州的“bing cherry” 还是有较大差距的,所以这几年来我们也就没有把它当成水果吃,倒是成了鸟儿们的美食。去年,春末夏初时,不知是这株樱桃树的大年,还是气候特别适宜,总之,樱桃结的特别的多也大,满树都是,压得树枝沉甸甸的,有的已掉入草地,不收不用好像有点“暴殄天物”,所以动了自制樱桃酱的念头。 一树樱桃带雨红 楼大叔喜摘丰收果。当时可能也就收了7-8磅,不到整棵树的5分之一。又因为当时特别忙,来不及制作,就将樱桃分成3袋,用保鲜袋扎紧放入了冰箱冷冻柜。这一等就等到了去年10月底,正好当时家里已开了暖气,在家里熬制还可以制造点水蒸汽,使室内暖气没有那么干躁。 速冻保鲜的家种樱桃一大盆 洗净,放入锅中加热 当锅中樱桃水微开时,用手持电动搅拌器小心搅拌几下。注意,要放入锅中才开动,离开锅之前停止再拿出,否则…. 满屋尽下樱桃雨 经过以上的处理,樱桃果肉较容易与籽分离 再将分离好的果肉用打汁机打碎 放入锅中中火收浓,这时可视口味加糖,用冰糖最好,我是用了一半白糖一半蜂蜜。熬制到中间时,我还加了一包Lell-O 粉,以增加黏度和稠度。 最后趁热倒入经沸水消毒过的玻璃广口瓶中,室温冷却后放入冰箱,可当果冻吃也可夹土司吃。 纯天然,无防腐剂,口感Q 爽,味道酸甜,priceless……
