暖心暖胃老鸭煲
秋风起,天渐凉,又到煲汤的时侯了。1年前的初秋正巧回国在杭州,承蒙学长们的招待,在杭州一家新开张的张生记品尝了该店的当家名菜—老鸭煲汤,印象深刻。回美后的那个冬天就在家里开Party 时“土法炼钢”的煲了2次,得到了众来宾的追捧,特别是得到在杭州土生土长的外甥女的高度赞扬(连喝3碗),充分说明还是山寨得很成功的。这不,今年天一凉,我又如法炮制了一回: 原料:光鸭一只(冷冻的),在老美店里只有嫩鸭卖,也只能将就了。好处是鸭子处理得很干净,无细毛,无头无鸭脚,带鸭心,鸭肝和鸭胗。冷冻袋装冬笋2袋,正宗杭州千岛湖笋干一袋,老姜一大块,料酒等。 作法:将鸭子斩成小块,冬笋化冻切成块状,笋干泡软切去老头。从水管里放出热水将鸭块冲去血水后,加冷水在高压锅里,放鸭子,冬笋,和笋干,拍老姜一块,加料酒适量,压20分钟,然后转入汤煲中慢火在来30-40分种,这时可尝淡咸后加盐(笋干有咸度)。如果时间充足,可用陶瓷汤煲小火慢炖一天,香气更浓。 就这么简单,一锅简易张生记老鸭煲就山寨出来了。我分了三分之一送给了我一个老年朋友,她最近在做化疗,给她补补身体。 一碗好汤暖人心阿
