几款家常面
昨天(星期六)的下午和楼同学去看了《功夫熊猫》,听说编剧在动手写剧本前,花了8年时间研究中国文化,对中国的大智若愚,大巧若拙很有点体会,中国元素加上好莱坞式的包装,即励志又超级搞笑。熊猫阿宝的爹是只鸭子(?),以开面条店为生的,做的汤面远近闻名,他对阿宝传授的密诀就是,其实那传说中的秘之又秘的面汤配方就是nothing,只是普通的面汤而已,但是,要想让一件事特别,你一定要相信它特别,才能把事情办好… 说了半天,也是告诉大家,阎家食堂的这几款家常面条也没有什么secret ingredient, 特点就是简便易学,又不失美味,在吃腻了米饭的时候不妨可以换换口味: 冬天常吃的 清汤牛肉面 和 打卤面 我们家经常卤牛肉,吃到最后可利用剩下的牛肉片作这款面条。开水下面,捞起待用。倒一罐牛肉清汤烧开,加青菜加煮好的面条,装碗摆几片牛肉就好了。打卤面以前已介绍过了,参看2006/6月旧文。 夏天经常吃拌面 意大利面条 这个没有什么技术含量,炒肉糜,加一罐意大利面条酱,放入煮好的意大利面条上即可。 陕西风味的梢子面,肉糜半磅,加少许油拌开,加油大火炒肉糜,不要让肉糜结块,加料酒,酱油,这梢子就炒好了。切黄瓜丝待用。拍半头大蒜,香菜切碎,加山西老陈醋和少许生抽。煮好的面条上按自己的口味加梢子和醋料,拌一拌,就黄瓜丝,夏天很开胃。 类似的,将北京王志和黄酱放油炸香加炒好的肉糜,花生碎,配黄瓜丝就是京味的炸酱面,加四川担担面酱就便成担担面了。我之所以在各种酱里加肉糜,有一些是配方要求的,还有就是保证蛋白质的摄入量,再煮一锅青菜汤或冬瓜汤,维他命也有了。 提醒一下儿要去看《功夫熊猫》的同志们,一定要坚持看完片尾,有好听的歌,了解有哪些著名影星配音,还有就是最后的几十秒,画面温馨,与前面的片子有呼应,真的也是影片的一部分不假。
